skillet biscuits
2 c unbleached all purpose flour or pastry flour
2 tsp baking powder
1/2 tsp salt
2 tbsp butter
enough fat left over from frying a chicken
to come halfway up the sides of a skillet
1 c buttermilk
Sift together flour, baking powder, and salt into a mixing bowl.
Add the butter and cut it in with a pastry blender or two knives
until the flour resembles coarse meal.
Reheat the fat over medium high heat.
Make a well in the center of the flour
and pour in the butter milk. Quickly sift it in
until a smooth dough is formed, working it as
little as possible. Lightly flour the dough and
gather it into a ball.
Lightly flour a work surface and put the dough on it.
Gently pat it out into a flat cake about 1/2 inch thick.
Fold it over, give it a quarter turn, and pat it out again.
Lightly flour it again if it begins to stick. Repeat
twice more and pat out the dough to 1/2 inch thick.
Quickly cut the dough with a knife into squares or
with a cookie or biscuit center into rounds. When the
fat is hot-around 325f add the biscuits one at a time until
the pan is full but not crowded. Fry, turning only once, until
the biscuits are risen and uniform golden brown 3 to 5 minutes.
Drain on absorbent paper and serve at once.
