buttermilk hush puppies
1 1/3 c yellow cornmeal
1 c self-rising flour
1/2 c cornstarch
1 tsp baking powder
2 tsp cajun seasoning
3 green onions, finely chopped
2 garlic cloves, finely chopped
3/4 c buttermilk
1 tbsp butter
2 large eggs, lightly beaten
vegetable oil for deep frying
Combine the cornmeal, flour, cornstarch, baking powder,
seasoning mix, onions and garlic in a large mixing bowl.
Heat the buttermilk and butter together in a saucepan
over medium heat until the butter has melted and the
milk is warm. Make a well in the middle of the dry
ingredients and stir in the beaten eggs, followed by
the milk and butter. Stir together to mix well.
In a deep, heavy-bottomed saucepan or deep fryer,
heat the oil until hot. Form the hush puppy mixture
into tablespoonfuls and fry in small batches until
cooked through and golden all over, about 3 or 4 minutes
each. Remove from the oil and drain on paper towels.
Serve hot.
